I love a nice egg salad sandwich. So often they are a tad bit bland and dare I say, pasty. This egg salad promises to deliver a great flavor without the pasty texture. Serve this at a gathering and it will make housewives hate you for making them look so bad.
- 6 hard-cooked Eggs
- 2 tbsp prepared Mustard
- 2 tbsp Mayonnaise
- 2 tbsp white Sugar
- 2 tbsp Melted Butter
- 2 tbsp Sweet Pickle Relish
- 6 green Olives (with pimentos)
- ¼ tsp Salt
Separate the yolks into a bowl. Food process or hand chop the whites into very small pieces and place in mixing bowl. Put the yolks and olives in the food processor and chop thoroughly. Add the rest of the ingredients and blend well in the food processor. Scoop out the contents of the food processor into the mixing bowl with the chopped egg whites. Mix well. Spread on bread.
